This is easily the most nerdy pick ever, but the Stealth-X fighters used by the jedi in the star wars EU. Actually, just the XJ3 X-wing series as a whole was awersome

The mining ship Red Dwarf (despite lacking any automatic weaponry) was armed to the teeth with "bazookoids" and high explosives that (once the miners were in deep space) rigged to fire from the garbage disposal systems

basically they fired thermoses of nitroglycerin at anything stupid enough to attack them
